Canned baby cucumber process in TDP - Kim Ngan Anh manufactory
Cucumber just grows well in cool weather, so there are only 2 main crops per year, the first crop (Spring – Summer) is from March to May and the second (Autumn – Winter) is from November to January of the following year. The output per season is about 8,000- 10,000 metric tons of fresh materials.
Cucumber is often harvested after 40-45 days since planting and the leading time for harvest lasts around two months. In the harvest time, cucumber still grows very quickly, so it should be picked every day or so its size can be changed from 3-6 cm to 6-9 cm.
Our pickled cucumbers are manufactured under a traditional recipe by using salt, sugar, spices, and acetic acid. It is done through a brine fermentation process. Fresh cucumbers are picked, washed and salted thoroughly, and then added to a brine solution for weeks.
Vinegar, sugar and spices can be added to the process depending on customer’s requirements.
The Gherkin is a vegetable similar in form and nutritional value to a cucumber. Gherkins and cucumbers belong to the same species (Cucumis sativus) but are different cultivar groups. Gherkins are baby cucumbers that are used in pickling either in whole or in slices, stackers and chips.
Sometimes also called a Cornichon (the French word for gherkin), they have historically also been called horned cucumbers, crumplings, and gherkins. Depending on the type of pickles prepared in sweet or sour tastes, they are bottled and preserved in Acetic acid, Vinegar or Brine medium. The sizes of the Gherkins vary from 2-5cm, 3-6cm, 6-9cm, 9-12cm, etc.
