Gelatin ad a thickening agent is widely used in the food industry, such as jelly, edible pigment, senior jelly, ice cream, dry vinegar, yogurt,frozen food etc. In the chemical industry gelatin is mainly used as adhesive, emulsification and senior cosmetics raw material production.

Food grade gelatin which contains 18 kinds of AMINO acids human needs, can be used as stabilizer, thickener, foamer, and swelling agent etc. In food additives. So it is widely applied to the production of candy, ice cream quick-frozen food, composite mixed material, meat produce and dairy products.

Different textures and firmness characteristics can be obtained by :
* Varying the gelatin content: the more gelatine, the chewier the product.
* Replacing one gelatin with another quality of different gel strength: for the same firmness in the       finished product, a less high bloom is needed to substitute for low bloom, resulting in less chewy product.
