*Key Points for Dissolution of Carrageenan:
If high speed stirrer available, heat water in the stirrer to 85°C or above, then start the stirrer, put carrageenan into vortex of the flowing water, stir smoothly and uniformly.
While if no high speed stirrer available, carrageenan must be put into cold water, absorbing the water, then swelling and dissoluting. Do not put large quantity of carrageenan into boiling water without stirrer to avoid caking.
*Storage:
Please put carrageenan in a dry place with ideal temperature of 18-25°C, avoid contamination as well as high temperature which would lower Gel strength.
